Easy Coconut Rice
This easy coconut rice recipe is a reminder of my childhood memories. My grandma would cook up a batch of coconut rice whenever a coconut fell from the tree in our backyard. It is such a fond memory because I don’t remember a lot from my childhood, but this one sticks with me like gum. In fact, I remember how I would watch her break the coconut ever so gently so that she could maintain its integrity – the coconut water. The truth is this, I love cooking but have had many fails with baking and quite frankly, I am lazy…enough with the judgment people, don’t judge me…okay, you can but just a little. This gluten-free pumpkin muffin will have you going back for more.
The Best Non-Alcoholic Sangria
Plan ahead if you want to maximize the taste of this special non-alcoholic Sangria. When the flavors are allowed to marry, it tastes better and you almost forget that you are drinking a Virgin Sangria. The best part is that you can share with the kids for a perfect family time. It makes a good pairing with Homemade Apple Chips. If you are able to find red currant extract, the flavor of your Sangria will be even more amazing.
